DAYTON, Ohio — Carillon Brewing Co. at Carillon Historical Park is getting a new kitchen partner: Cooper’s Kitchen will bring a German-inspired menu to the 1850s-style brewery by the 2026 holiday season, Dayton History announced Oct. 30, according to reporting by the Dayton Daily News.
Cooper’s Kitchen is a collaborative effort involving team members from Archer’s Tavern and The Stone House Tavern, two established Dayton-area eateries, according to the Dayton Daily News reporting. The menu will feature signature items including beef on weck sandwiches and footlong pretzel braids, the Dayton Daily News reported.
The name is a tribute to Daniel Cooper, a foundational figure in Dayton’s development for whom the kitchen is named, according to the Dayton Daily News reporting. Cooper came from Cincinnati and laid out the town of Dayton in the 1790s, a piece of city history Carillon Historical Park itself preserves in its Pioneer Home exhibit.
The kitchen will occupy space within the Carillon Brewing Co. footprint at 1000 Carillon Blvd. in Dayton, according to the Dayton Daily News reporting. Dayton History, the private nonprofit that preserves the Dayton region’s history and operates Carillon Historical Park, announced the partnership on Oct. 30.
The new partner fills a gap at the park. Carillon Brewing Co. is an 1850s-style brewery and restaurant that opened in August 2014 and is the only brewery in the United States replicating the historical brewing process, with costumed interpreters brewing in copper kettles over wood fires, according to Ohio Magazine’s history of the brewery. Its previous food partnership with Dayton BBQ came to an end in late September, when the brewery told followers food service would resume very soon, according to Carillon Brewing Co.’s update republished by Dayton Local.
What happens next: Cooper’s Kitchen is expected to open to the public by the 2026 holiday season, according to the Dayton Daily News reporting of Dayton History’s announcement. Visitors to Carillon Historical Park this winter can expect the German-inspired menu — beef on weck, footlong pretzel braids and more — alongside the brewery’s historically brewed ales at 1000 Carillon Blvd. Carillon Brewing Co. currently pours Wednesday through Sunday, according to Dayton History’s visitor listing, so holiday-season visitors will be the first to pair the new kitchen’s menu with a pint brewed the 1850s way.
